Aponte is an Indigenous reserve where producers farm small, rural lots. They were early adopters of the honey process, pioneering the technique in 2017 and becoming true specialists. The region’s low humidity and cool temperatures allow coffees to dry slowly, helping develop complex and delicate flavours.
The honey process sits between washed and natural coffees. The cherry skin is removed, but the beans are dried with their sticky mucilage intact, adding sweetness and body. Once drying is complete, the remaining mucilage is removed and the coffee is prepared for export.
